Like everything else here at the Great Chicago Fire Brewery, we are about the craft. This includes the Spirits we serve; handcrafted by small batch distilleries right here in Florida.
Flights of any 3 spirits (3/4 ounce each) are available - $12.00
Palm Ridge Reserve - Umatilla, Florida - $6.00
Big rye signature to the nose: fruity, light and easy on the corn oils. Some hints of marzipan, trimmed apple and very old marmalade. Just enough oil to absorb the impact of the small grains and again, the ryes run riot ensuring a juicy, spicy theme throughout. A little Parma Violet candy represents an earthiness which balances the complex, non-specific fruit doing the rounds rather than blast in like a Hurricane from the sea; it breezes gently around the glass and palate with an easy elegance. …45% ABV (90 Proof)
Palm Ridge Rye - Umatilla, Florida - $6.00
A dark, reddish, mahogany color. The initial aroma is startlingly savory, much like sherry wine. With a little time, that dissipates to reveal an exceptionally fruity nose, almost reminiscent of grappa or fruit brandy. Simultaneously sweet and savory, with strong fruit character, as well as notes of chicken bouillon, violet, creamy butterscotch and cinnamon stick. This is a strange, very culinary whiskey that lacks a lot of the toasty aspects of the grain I’m accustomed to, but it’s also quite tasty, with a medium length finish. …50% ABV (100 Proof)
Wild Buck American Rye Whiskey – Weeki Wachee, Florida - $6.00
The rye whiskey has a traditional look of dark amber with some threads of yellow depending on available light. It is of light to medium viscosity with short to medium legs. The aroma is of sweet caramel or even toffee, heavy oak, spiciness, vanilla along with some faint fruitiness. The smells are really fun to explore and add greatly to the pleasure of this rye whiskey experience. Oak certainly drives the flavor, but it’s couched in custard and caramel with a grainy rye base. There is a medium to long finish. 50% ABV (100 Proof)
Pearse Lyons Reserve – Lexington Kentucky - $6.00
Pours a brilliant orange, with dull rust-like tones at the glass’ edge. Be prepared for a mind-boggling hybrid aroma which seems to bridge the Irish/American style gap. First waft is full of ripe raspberries. There is some oaky marshmallow present which helps tame the bright, tart, berry-like angle in the aroma. At first taste, this liquid comes across as a typical malt whiskey, grainy acidity in the front, followed by a larger bouquet of fresh red fruit, preceded by the raspberry notes in the aroma. The oak helps to dry out what could be a dangerously sweet whiskey. 50% ABV (100 Proof)
Florida Mermaid Rum - Weeki Wachee, Florida - $6.00
The nose begins with bold aromas of black banana, flowers and butter. Next, vanilla and almond emerge over oak with a big funky fruit basket. On the palate, complex esters offer a delightfully fruity astringent entry that evolves to big warmth in the mid-palate. Wood and brown butter dominate before some baking spice as the finish slowly fades. 50% ABV (100 proof)
Old St. Pete Rum & Spice - St. Petersburg, Florida - $6.00
This is a deep, rich iteration of a spiced rum. It manages to be both sweet and earthy, with base flavors that taste quite bourbon-esque. Warm vanilla and honey mix with cinnamon, clove and allspice. There's also hint of tobacco and orange peel. Very complex for a spiced rum. 43% ABV (86 proof)
Oak & Palm Coconut Rum – St. Petersburg, Florida - $6.00
A coconut rum that doesn't taste like it was made in a lab! Sweet vanilla and icing sugar flavors mix with true coconut. It tastes almost like drinking a good coconut cake, with a slight floral note. Finishes clean and subtle. 35% ABV (70 Proof)
Wicked Dolphin Brewer’s Series Double Barrel Rum – Cape Coral. Florida - $6.00
This Florida rum first spends two years aging in ex-bourbon barrels. These barrels—after holding bourbon for three years and rum for two--then travel to a brewery for a nine-month stint holding stout. A wonderful aged rum offering a soft nose of cocoa and light bourbon wood over vanilla, with a bit of cocoa butter and a hint of sherry. Vanilla, butter and wood lead to a dry mid-palate when a subtle warmth delivers an echo of hops into a dry finish dominated by lightly charred wood. 46% ABV (92 Proof)
Wicked Dolphin Crystal Rum – Cape Coral. Florida - $6.00
Smelling the aroma of the sweet vanilla and honey combination will be the first things that you pick up. As the dominant notes settled, you will detect a subtle hint of oak and molasses. Sipping the rum quickly reveals a nice citrus- lime and oak note up front, followed by vanilla, honey, a light hint of caramelized molasses and a faint spicy alcohol.
Alligator Bay Dark Rum – Punta Gorda, Florida - $6.00
The smell of buttery, toffee, oak hits you first, then the pleasant taste of succulent, but nicely balanced mellow chocolate. 2017 Gold Medal Miami Rum Fest. 40% ABV (80 Proof)
Rambunctious Spiced Rum – Key West, Florida - $6.00
This rum is made from pure, natural cane sugar and blackstrap molasses. Due to the geographical nature of the sugar being from Costa Rica the rum has a Cuban, Central, South American flavor. It has an intense cinnamon flavor which makes it stand out from other spiced rums. 40% ABV (80 Proof)
